My question is: which is the information contained and the meaning of the PINotifications Tag "xxx_State"

The state tag stores an integer that is the state's code. The state is defined on the a condition in the Trigger tab:
If you change nothing in your notifications, conditions typically get a state of OutsideControl, whose code is 1. You can see all the codes in PSE if, from the Notifications tab, you go to Tools > Notification Settings...
That tag is a state tag for a Notifications. When older versions of notifications (2012a and earlier), information about the notifications is stored in 7 notifications tags (6 of which do not contribute to your licensed PI Tag Count)
The xxx_State tag tells you when a notification is acknowledged
