Have you considered using a Rollup analysis? I think it would fit your needs. You can create a Rollup analysis for Sum of Flour, one for Sum of Sugar, one for Sum of Chocolate, etc.

Here is an other example of steps of a recipe:
Step 1: Dosage of Egg, Value: 100kg
Step 2: Dosage of Sugar, Value: 100kg
Step 3: Mixing, Value: 30s
Step 4: Dosage of Flour, Value: 20kg
Step 5: Mixing, Value: 30s
Step 6: Dosage of chocolate, Value: 50kg
Step 7: Mixing, Value: 30s
Can I use a criterion for filtering the steps in the rollup analysis which match the "Dosage of Flour" or the Dosage of Sugar ?
You can add a filter on the attribute name, or you can add categories to the attributes and create a rollup based on e.g. the 'sugar' category.
So on the top-level in your element, create a sum attribute for each ingredient, and fill that using a rollup analysis performed on the child attributes
