This seems like a very basic question but haven't found a solution yet. I want to use Datalink to pull in data in 5 minute intervals. However, I don't want interpolated data. I just want the actual value at that time interval.
Are there values exactly 5 minutes apart stored in your PI Data Archive? If there are, can't you simply use the Compressed Data function in PI DataLink?

The values change about every 2 minutes. I only want to show the values at 5 minute intervals.

Is there a specific reason why you do not want interpolated results? If it is generally true that you do not want this point's data to ever be interpolated, you may want to consider changing its configuration to be stepped, and then you can use PI DataLink's Sampled Data for getting values every 5 minutes.
Otherwise, you can perhaps use DataLink's Timed Data to retrieve 'exact' values, but you would have to supply the timestamps with the desired interval yourself:
