I am not sure if I properly understand your question. You may want to consult the product manuals - especially user manuals - available at vCampus Library -> vCampus PI Product Kits.
Within PI Coresight you can use different controls for this purpose. When moving your mouse over a controls title, additional information is showing including timestamp information.
I am not sure what you are referring to with displaying a value with its time in AF. Do you possibly refer to PI System Explorer or did you intend to ask how to show value and timestamp of an AF Attribute within PI Coresight?

The same way as you do it with a PI Tag. You search for the Element by name, pick Attributes from the results, drag and drop them to the display and select the graphical object (trend, value, gauge etc.) you want to use for visualization.

Coresight currently doesn't offer multistate symbols but it's planned to offer this in a future release.
In the next release of PI Coresight (PI Coresight 2014, expected first half of 2014) you will be able to open PI ProcessBook displays. So creating a PI ProcessBook display with multistate symbols for use in PI Coresight will be the quickest way to get this functionality.
