Can some one advise me what I must be doing wrong to make ProcessBook detect an OBDC column as a PI tag?

You're right. That definitely looks wrong. My guess would be that if the column doesn't exist or is inaccessible, then the dataset is failing and it's reverting to a PI tag, but you'd still have to have a PI tag with that name (DS.Column). I would call tech support on that one. It looks buggy.
ODBC Data Sets are querying data from relational database and you can include this data into ProcessBook display. This is not connected with PI Tags. If you would like to have this data stored in PI Data Archive, you could use e.g. RDBMS Interface to write this data into PI Data Archive. Then you can view this in ProcessBook display as any other Tags. You can choose either of this ways, depending on you. For more info, you can simply open the Help in ProcessBook and search for ODBC. There are couple of examples.
